Monticello Amber / Green Chile Amber

Also known as Red Ale, Amber Ales are darker than Pale Ales, but not as dark as Brown Ales, and are generally described as being medium-bodied and malty.  Typical American versions include a citrus hop aroma and flavor, though for the Monticello Green Chile Amber, we added locally roasted green chile instead of hops. The result is a rich, malty ale with a mild, smoky roastiness and a mellow green chile flavor.

Fireside Tripel

A Belgian Tripel is a strong pale ale brewed with Belgian yeast, which can add flavors of banana, clove, and pepper. The style gets its name from its higher alcoholic strength. Some say that its original brewers used triple the ingredients of their basic ale, or that their pale ale came in three versions, 3%, 6%, and 9% ABV. Sucrose (cane sugar) is often added to this style, to lighten body and increase alcohol – we used about 6% sugar and 94% malted barley. German noble hops balance the sweetness, resulting in a strong, warming elixir with plenty of fruity esters and not too sweet.

Honey Winter Ale

Winter Seasonals are traditionally full-bodied, warming, dark ales, often with specialty fermentables (such as maple syrup, honey, or molasses) and spices associated with the holiday season (like cinnamon, ginger, evergreen). We opted to use five gallons of Rio Grande Valley honey as both a fermentable and a flavoring component, and its warm floral sweetness really comes through in this strong dark ale.

Airstream Ultra

This is our lightest-bodied, lightest-colored beer. At barely 130 calories per pint, Airstream Ultra won't slow or weigh you down. Refreshing, thirst-quenching, and just $3 a pint.

Cosmic Blonde

A light-bodied, straw-colored ale. Delicious and thirst-quenching. T or C Brewing's first ever large batch beer.

Buckhorn IPA

Our first India Pale Ale, this is a rich-bodied beer bursting with citrusy hop flavor but without the powerful hop bitterness commonly associated with the style.

Palomas Porter

Palomas Porter is a rich, silky American Porter, based on an award-winning recipe created by our brewer and co-owner John Masterson. Hints of chocolate, coffee, and raisin are balanced by a smattering of Cascade hops aroma.

Dark Skies Oatmeal Stout

Deep black in color with rich coffee-and-cream flavors.  We included flaked oats in the recipe, which adds a smooth, velvety mouthfeel.
